Summer Special: Barbecue & Beer @ Commander's Palace

For years, we have seen upscale cookery being served in restaurants designed to look as if a bomb had smashed them a few years ago. Now here is one of the most auspicious cining circumstances in town--Commander's Palace, which has not only white tablecloths but a dress code (although not a very stringent one)--serving barbecue. The very idea seems out of place. . .until you think about it for a minute. The way it works is this. Make a reservation at Commander's for any day this month (July). Show up. Pay $65 per person. Add $20 for artisan beer pairings (!) to the six-course dinner. (Or $43.25 for wines.) Show up, roll up your sleeves, stick the point of the napkin into your upper shirt, and go to town. Half Shell Oysters
Cane vinegar and coriander granite with sea salt

Smoked Redfish and Caviar
Pecan smoked redfish and BBQ caviar with pressed lemon, crab boiled potatoes, Mexican corn and charred parsleY

St. Arnold, Casamigo Silver tequila and fresh lime juice

Smokehouse Spare Ribs
Crispy confit duroc pork with baked corona beans, pickled watermelon cucumbers, pork fat corn bread and molasses
Beer: Paired with Bayou Teche (Louisiana Pale Ale)

Broken Arrow Ranch Antelope
Smoky beef fat injected loin with antelope tamale, smashed chipotles, tomatillos and queso fresca
Beer: Paired with Parish Brewing (Envy)

Peach and Sweet Tea Cake
Roasted peach streusel, peach & sweet tea sorbet, BBQ chicken cracklin’ with Southern Comfort custard
Beer: Paired with Bayou Teche (Cocodrie)
