Monkfish liver has been called "the foie gras of the sea." It comes from the famously ugly fish, whose livers are carefully collected and steamed. It needs no processing to have a pate-like texture. It's served in better sushi bars, where it's called ankimo. It's not always available, but I've had it a few times at Ninja, the great sushi bar in the Riverbend.
