The name means "good woman's chicken." The idiomatic meaning of "good woman" here is one who is not only a good cook but who has to make the most of a meager ration of food. I don't know how this dish qualifies. The way they make it at Tujague's, a half chicken is fried without a batter, then covered with garlic and parsley and thick fried potatoes.
