Boiled Beef Brisket @ Bon Ton Café
Boiled brisket, once an almost universal lunch special in New Orleans white-tablecloth restaurants, has become a rarity. Only the old-time places have it anymore–notably Tujague’s. As good as theirs is, the way they serve brisket at the Bon Ton Cafe–where it’s the Tuesday lunch special–is ideal. It comes to the table as a couple of large cubes in a bowl of broth, with potatoes, carrots, and a whole onion in there. Extraordinarily tender and flavorful. Horseradish sauce on the side, of course.
