Kibbe (pronounced “kibbie”) is ground beef or lamb with an admixture of cracked wheat and parsley. It is served in restaurants fried but rarely coated. In Lebanese homes, another version made with raw ground beef, mixed with the same ingredients and spices as the fried kibbe is. But few restaurants serve “kibbe nayyih,” as the raw kind is called. Fried kibbe at Byblos is just right, The outside is crusty to the point of hardness, and the interior is tender and light with its . It’s best served with hummus, the latter making a fine sauce for the kibbe.

    New Orleans Style Seafood Restaurant and market is a lovely new place in the 1500 block of Hwy 190 in Covington. (It’s a triangle building – can’t remember what used to be there). We really enjoyed our meal, although it is a fairly new place, they seem to have a handle on the food and service. Hope you visit it and review it soon. eey
