Grilled Quail And Lamb Chops @ Gallagher’s Grill
Pat Gallagher has featured this unusual combination in every one of this restaurants over the years. The two flavors are naturals together–if you can eat that much food. The standard version of it these days involved two thick lamb chops and two whole quail, crusty from a walk across the grill and sizzling in butter. The latter is relatively new, an idea Pat picked up after spending a few years at Ruth’s Chris. It’s the kind of entree for those looking the break away from the commonplace proteins like chicken and beef.
