Lemon Vinaigrette Dressing

Here’s a tart, refreshing salad dressing that’s especially good on bitter greens like arugula, radicchio, endive, or frisee.

Vinaigrette

Green lettuce with herbs and vinaigrette

  • 1 tsp. Dijon mustard
  • 2 Tbs. lemon juice
  • 1 Tbs. balsamic vinegar
  • 1/3 cup olive oil
  • 1/4 tsp. salt
  • 1/8 tsp. white pepper

Combine the mustard, lemon juice, and vinegar in a bowl with a wire whisk. Add 2 Tbs. cold water, and then pour in the olive oil in a slow stream until incorporated fully. Add the salt and pepper, and toss with salad greens.
