The name means “elephant ear” in Italian. And that’s what it looks like, after chef Gio Vancheri pounds out a veal chop until its area is three times as large as it started. The veal–with the bone still attached—is coated with bread crumbs and fried in a little hot oil in a skillet big enough to hold it–and that’s big indeed. It’s topped with arugula.

    Just had this dish Tuesday night and it was delicious. It was literally served to me on a large platter along with a side of spaghetti with marinara sauce. Probably would have preferred a small amount of angel hair with some of the lemon butter caper sauce from the veal chop instead. Will ask for that next time!
