Every few years I undertake a survey of sources for New Orleans’s traditional Monday lunch. The big problem I encounter is consistency–in both senses of the word. A restaurant will make perfect red beans on one visit, then on another they’re much thinner (or thicker) and lack flavor. Among the few restaurants where I’ve never encountered this is the Peppermill. They sell a lot of beans every week, with the hot sausage (or whatever you want; just ask). And they never change. Always impressive. They serve you too much, of course, but red beans do get better the second day.
