Shrimp and grits–an imported recipe from the Carolinas–has become almost universally available in New Orleans restaurants. Each version is different from the others, but the one at Herbsaint more than most. Tasso and collard greens figure into the big-flavored sauce. One expects a hint of gumbo, but that’s not it. Originally good. And the grits are coarse and delicious.
