If I am ever known for promoting a neglected flavor combination, it will be for the affinity seafood and beans have for one another. It is particularly rewarding in this chain of three seafood cafes around New Orleans, where red beans are the natural Monday special. Aside from the smoked sausage as a protein, the NOF&S allows you to request blackened catfish. I am not a fan of catfish prepared in any way other than fried. But lay on a crust of Creole seasoning onto a catfish fillet, blast it in a hot black iron skillet, put the resulting fish atop the beans. . . and you really have something. Their beans, available every day--are as good as the fish is.
