Hot and Sour Soup @ Trey Yuen
This is the soup that made it worth ordering soup in a Chinese restaurant. Trey Yuen was not the first restaurant in town to serve it, but theirs is the best locally. It is not ladled out of a simmering pot, as it is in most places, but made to order, using fresh mushrooms (a real distinction), strips of pork and bamboo shoots, and an admixture of pepper oil that I find a touch on the low side--but that's easily remedied. (All you have to do is ask that it be made a little spicier than usual.) Perhaps no other dish shows the excellence of Trey Yuen's kitchen so well.
