One of the most popular appetizers at the city's oldest Cajun restaurant--especially among those having a leisurely cocktail before dinner--are this thin strips of small, tender catfish, rolled in corn flour and fried until crisp and golden. The come out with a pink sauce named for Alzina Pierce, who with her husband Al ran the Bon Ton from the 1950s until the 1990s. The sauce is your basic "secret sauce," which the world over is mayonnaise, ketchup, and mustard, with a little of this or that. They're habit forming, until whoops! They're all gone.
