"Salta in bocca," the phrase contracted in this dish's name, translates as "jump in the mouth." It tastes so good, that's what it seems to be doing. Indeed, the promise usually is delivered upon in most restaurants that cook this layered dish of veal scaloppine, prosciutto, fresh sage, and a brown sauce--often made with Marsala wine. The version at Fausto's is topped with melting Fontina cheese, a step away from the classical recipe. But it works perfectly.
