There's more to potatoes au gratin than melting a thick wad of cheddar cheese over some sliced potatoes. It's not supposed to be like macaroni and cheese. The best version of all time came from the extinct Crozier's. Close behind is the version at this long-running Lakeview steak (and everything else) restaurant. Seems to be the same recipe as the one they use for their terrific crabmeat au gratin. Light, bubbling hot, and just cheesy enough.
