Shell Beach is an old fishing village on Lake Borgne, famed for the excellence of its fish and shellfish. "The Shell Beach Diet" is Chef Frank Brigtsen's nickname for his seafood platter. It differs from all others in that a) nothing on it is fried; 2) its contents change with the seafood markets; and iii) no two items are prepared the same way, or the way they were last time you tried it. It's almost a full dinner unto itself. A soup or salad starter is all you'll need. (And a dessert, of course.) Here's a sample of a day's Shell Beach Diet in May:
