Risotto @ Ristorante Del Porto
"Risotto" is as generic a word for a dish as "pasta," which almost makes it inappropriate for this survey of specific dishes. However, Del Porto's risottos are so uniformly excellent that I don't really need to know what kind they're making on the current menu. It will be better than any other risotto being served around town at that moment. It's never too soft or too hard, too dry or too gooey, and the flavor of the night is front and center always. This fits right in with the rest of the menu, inspired as it is by the cooking of northern Italy.
