Richard Fiske was owned the Bombay Club for some twenty years until he passed away last year. His wife, staff, and chef, looking for a fresh start, moved to the spacious restaurant in the Chateau Le Moyne Hotel, a block from the old place, and picked up where they left off. Exception: Chef Nick Gile, who was responsible for the cooking style at the old Bombay for some fifteen years, reworked his menu. This is the best of his new dishes, with a take on lamb that blends Mediterranean flavors with the coffee touch. It's a real original and one of the three or four best lamb racks around.
