Boiled Beef Brisket @ Bon Ton Café
Boiled brisket, once an almost universal lunch special in New Orleans white-tablecloth restaurants, has become a rarity. Only the old-time places have it anymore--notably Tujague's. As good as theirs is, the way they serve brisket at the Bon Ton Cafe--where it's the Tuesday lunch special--is ideal. It comes to the table as a couple of large cubes in a bowl of broth, with potatoes, carrots, and a whole onion in there. Extraordinarily tender and flavorful. Horseradish sauce on the side, of course.
