Braised veal cheeks is a marker dish for restaurants striving for or achieving hipness with a customer base that's willing to try unusual dishes. The first time I ever encountered them was at Auberge de l'Ill, a three-star Michelin restaurant in Alsace. I never thought I'd have them in New Orleans, but there they are, a regular item on the menu at this rather French bistro. Veal cheeks are exactly what they claim, melt in your mouth, and are very delicious.
