The name means "good woman's chicken." The idiomatic meaning of "good woman" here is one who is not only a good cook but who has to make the most of a meager ration of food. I don't know how this dish qualifies. The way they make it at Tujague's, a half chicken is fried without a batter, then covered with garlic and parsley and thick fried potatoes. The garlic is the standout flavor. This is the best dish at Tujague's. If you want it, reserve it when you call for a table reservation.
