Chicken Tableau @ Tableau
One of the signature dishes of the Brennan family's restaurants over the decades is chicken Pontalba. In its classic form, it was a baked chicken half topped with a hash of potatoes, ham, and bearnaise sauce, with a brown sauce underneath it all. Created originally at Brennan's on Royal Street, it fell in and out of favor, popping up at other Brennan restaurants unpredictably. Dickie Brennan's restaurants have featured it most often. The dish minus the chicken is a long-running side dish at Dickie Brennan's Steakhouse, for instance. And in D.B.'s newest restaurant Tableau, here it is again, this time without the ham, and with the breast and thigh quarters cooked separately and differently. It's the best dish at Tableau.
