[/dropcap1]My favorite bread baking book is Bread Alone by Daniel Leader. It doesn't just give recipes, but starts at the beginning to explain how bread dough works, how to make your own levain from yeasts in the air, and why recipes have to be followed exactly. If you're really serious about bread, you will be very well informed by this book. Note: because a book title can't be copyrighted, there are several books named "Bread Alone" out there. Be sure you get the one by Daniel Leader and Judith Blahnick (she's a well-known cookbook author). I just checked on Amazon and found that it's easily available.
