Crab Cake @ Cafe Sbisa
The standard of excellence for crab cakes is that it be made out of jumbo lump crabmeat, held together with barely enough other ingredients to hold the thing together. It must not be describable as a stuffed crab, which is a different sort of thing. But in its crab cakes Cafe Sbisa has hit the perfect norm. This is not jumbo lump crabmeat--unless the jumbo lump has been pulled apart or shredded. It's white crab, sure enough, and it constitutes about 80 percent of the content. That's one of the winning aspects of the finished product. Also contributing is a great sauce on the plate under the cakes. It's close to being a white remoulade, with mayonnaise, Creole mustard, and (I think) a little horseradish. It might also have a little cream. Finally, they give you two nice-sized crab cakes for $15. It's enough to make light entree. It's certainly the best appetizer in the house, and has the classic crab cake flavor..
