Cypress Leaves A Void

We remember the very origins of Cypress restaurant. The owner of the building, Nicholas Huth and his wife were on a 2003 cruise to Alaska with us when he mentioned he was renovating a  building with his son on Transcontinental Dr. in Metairie. It became Restaurant Cypress, a delicious casual bistro that was a great addition to the Metairie dining scene. Nick’s son Stephen was in the kitchen and his wife Katherine did the front of the house, and it remained a reliable Metairie dining spot until it closed after Mardi Gras. There is nothing more to the story than the Huth’s wanted to lose the 18-hour days and enjoy what other opportunities life might offer them. They had talked about it for a while, and sometime around Mardi Gras, vendor contracts, insurance payments, and all other tedious business matters came together in perfect timing.


Katherine mentioned that she’ll miss the customers, but that’s about it. The restaurant business is an all-consuming one, and it does wear. After 17 years, the Huths had decided to hit pause. Relaxing and regrouping is their first order of business, Everyone is cleaning up and moving out, and soon Nick Huth with be looking for a tenant for the building.  


Stephen will likely return to the kitchen somewhere as a chef and turn out the kind of simple but delicious fare that the restaurant was known for: a basic filet, grilled salmon, roast duck, and rosemary chicken. We liked the soft shell crab in a simple cream sauce (pictured.) Look for Stephen somewhere as a chef but not an owner, where he can cook and leave the business to someone else. And Katherine is open to all possibilities, including any that come from her former customers.
