Last week one of the things picked up on the regular runs was biscuit mix from GW Fins. This was a bargain at $5 a package. We love these biscuits at the restaurant and were anxious to try them at home. It seemed odd that they saids it would make a dozen biscuits or a batch of pancakes. It also seemed odd that it said to just add milk, and that the package should be refrigerated.
We understood it all when we made them over the weekend. The biscuits were extra rich because we used the high butterfat Mauthe’s Dairy whole milk we bought at another special pickup at HooDoo Ice Cream in Covington last week. It turns out that there is butter in the flour already. We had big plans to make breakfast sandwiches. There is never any bacon in this house, which is why a breakfast buffet out of town is such a treat for the Marys, who adore bacon in obscene quantities. Tom got some Jimmy Dean bacon, which is the first time we have ever had that product. It was thin bacon and very fatty, but it still had a good flavor, and when it was cooked crisp made for a stiff row of extra deliciousness on the sandwich.
After layering the cheese and sunny eggs and the bacon in a tidy stack, the toasty and buttery biscuits made perfect bookends. The fact that they were sweet was a surprise, and another surprise, not unwelcome. That explained why the package directions mentioned that it made a dozen biscuits or pancakes. And then I remembered that the biscuits in the restaurant are sweet. And still delicious. I’m not a sweet-and-savory-together person, so I disassembled my breakfast sandwich, but I found myself snacking on it later like a cookie. It’s that good.
The biscuits we made were drop biscuits, though I seem to remember they were mores structured in the restaurant. We made only six, and then I remembered how small they are in the restaurant. So the package really does make a dozen. Their size.
Too bad we only got two packages, because now the restaurant is on the temporarily closed list, and we want more biscuits.
