Fried Catfish @ Orlando's
I'm always on the lookout for distinctive fried catfish. The hallmarks of the best versions include the use of small fillets, frying with a light coating of cornmeal, just long enough to cook the catfish through without browning the coating much. Wild-caught catfish is the holy grail, but we don't see that much. Orlando's hits two out of three. It's so light and nicely seasoned and the fillets so diminutive that you can pick them up and eat it like popcorn. A nice find in a new North Shore seafood house.
