Kibbe (pronounced "kibbie") is ground beef or lamb with an admixture of cracked wheat and parsley. It is served in restaurants fried but rarely coated. In Lebanese homes, another version made with raw ground beef, mixed with the same ingredients and spices as the fried kibbe is. But few restaurants serve "kibbe nayyih," as the raw kind is called.
