Gyoza @ Mikimoto
Gyoza are steamed dumplings, stuffed with pork green onions, a little egg, and a few other ingredients. They're light, wiggly, and served hot, with a dipping sauce made of rice wine vinegar and soy sauce. They're really more Chinese than Japanese, but they're a standard item in sushi bars, where they serve a great purpose: to add contrast to a meal with several courses of sushi. One order is easily big enough for two people. Make it the first thing you order, so the kitchen can get it ready in time to arrive between the uni and the first roll.
