The Flaming Torch specializes in classical French cooking and dishes which, although you may have heard of them, you probably haven't had in a long time. A good example is lobster Thermidor. The broiled lobster with its rich sauce has become all but extinct on local menus. One or two days a week (or by special order), the Flaming Torch turns it out. The recipe is named for the Month of July, which was called Thermidor by the Romans until it was named for Julius Caesar. It's still a good dish, always made with Main lobster.
