Orrecchio Di Elefante @ Gio's Villa Vancheri
The name means "elephant ear" in Italian. And that's what it looks like, after chef Gio Vancheri pounds out a veal chop until its area is three times as large as it started. The veal--with the bone still attached---is coated with bread crumbs and fried in a little hot oil in a skillet big enough to hold it--and that's big indeed. It's topped with arugula.
