Although Zea is a mainstream restaurant, complete with the spinach-artichoke dip and hamburgers that marks it as such, it has a history of devising ambitious dishes that would seem more at home in an upscale, white-tablecloth place. This new dish is one of those. It's a handsome slab of medium-rare, wild-caught Atlantic salmon, glazed with balsamic vinegar. Not only is this a great bunch of flavors, but your dietician would approve of it enthusiastically. When this first appeared, it was encrusted with pistachio nuts, which added a great flavor and texture. They should bring that back.
