Rosemary Chicken @ Cypress
Roasting a chicken with rosemary, olive oil, garlic and herbs is such a natural blend of flavors that it's amazing how few restaurants make it. It's been a specialty at this little Creole bistro in Metairie almost since the place opened, and delivers all the aromatic flavor the dish is famous for. It's seared in a pan with the fresh rosemary, oregano, and mushrooms, then tossed with pasta and some shreddded Parmigiano Reggiano.
