There's no telling which restaurants start adding on locations and, before you know it, a chain of them had grown. The Ruby Slipper started shortly after Katrina in Mid-City (sort of behind Mandina's, which should tell you something about the place if you never breakfasted there). Then there was a second location in the CBD (Camp at Magazine) and a bigger version serving not just breakfast and lunch but dinner too in the Marigny.
Today is opening day for Number Four, at 1005 Canal Street. (That's on the downtown lake corner at Burgundy, in what was for eons the McCrory's store.) The menu will be a copy of the Mid-City original, with an emphasis on breakfast. What I think is making the Ruby Slipper popular is that its menu is a step up from the standard breakfast, and more like what would be sold under the Brunch category. Lots of local products and good cooking.
