Shellfish: The Greatest Of Louisiana Delicacies

The waters of the Gulf, the lakes, and the bayous are full of first-class finfish, But when you say the word "seafood" to a denizen of South Louisiana, he will probably think of a crustacean or a mollusk. Shrimp, crabs, oysters, and crawfish really should be on the official seal of the State of Louisiana.

Those four shellfish play starring and supporting roles throughout our menu and cookbooks. Below are our best recipes for all of those, as well as for out-of-town characters like scallops, lobster, mussels, and a few other eminently edible seafoods.
