Smoked Boudin @ Abita Barbecue
Most Cajun-style boudin is known for its peppery flavors and soft texture. What they do with boudin here adds another dimension entirely. This is a real barbecue joint, slow-smoking briskets, ribs, and pork shoulders. They also put boudin that they buy from a small local producer and shove it in the smoker for awhile. The results is a great flavor, and a tighter skin. A great snack for tooling down LA 59.
