Turtle Soup @ Tomas Bistro
Turtle soup, good as it is, becomes harder to find every day. Problem: the turtles are disappearing. At some point, we're going to have to get conscience about this. Or find a better way of farming them. Until then, the version made at Tomas Bistro (it may be identical to the one at Tommy Andrade's other place across the street) is one of the best around. Meaty, aromatic, dark roux, and highly distinctive. Don't add sherry at the table unless you want to ruin it.
