Veal Sweetbreads Chef's Way @ Clancy's
Among the ten or fewer restaurants around town that serve veal sweetbreads, each of them have partisans who claim that the version in question is clearly the best. Okay, I can play that game. My pick is Clancy's. The classic meuniere version with a light flour coating and brown butter is the more popular, but I've always liked the changing recipe the chef brings forth daily.
