Wasabi Baked Mussels @ Mikimoto
This is an exquisite dish, an appetizer made of three black mussel shells filled with two or three of the bivalve meats themselves (mussels always had more room than the need inside their shells, at least once they're cooked). The sauce is mayonnaise-based, following a trend of a decade ago. Stirred into the sauce is tobiko--the roe of flying fish. This caviar is marinated in wasabi (the sharply-flavored green sauce that comes with sushi) and baked until it bubbles. Eating this with chopsticks exceeds the manual dexterity of most eaters; you might want to ask for a fork. However you attack it, you'll consider whether getting a second round is a good idea.
