Whole Broiled Flounder @ Fury's
The most famous dish at West End Park before Katrina blew all its restaurants away was the whole "doormat" flounder. Most of the restaurants at West End fried or broiled it, with the most famous vendor being Bruning's. The dish has been hard to find since, but John Fury keeps it on the menu of his little Metairie neighborhood restaurant. Fury is himself an alumnus of an extinct West End restaurant--the Bounty--and knows the dish well. Well enough to only serve it when it's available fresh, and prepared to order. It's a tall order, so go hungry.
