Whole Crispy Flounder @ Pelican Club
The Pelican Club has built its large and enthusiastic clientele by steering away from the overly cerebral endeavors of the other five-star restaurants and performing magnificent versions of some very familiar local dishes. This is a perfect example. A big flounder (fish this size are called "doormats" in the business) gets fried, just like it was a million times in the heyday of West End. Then the chef adds his distinctiveness, with scallops and shrimp, with a sauce made of chili pepper and citrus puree. It's also great panneed with crabmeat. You need only ask.
