Orange-Flavored Raisin-Pecan Cookies
In a bowl, beat the butter until it's very pale. Add the egg and continue to beat until well blended. Beat in the orange rind and orange juice.
In a second bowl, combine all the dry ingredients except the pecans and raisins. Add to wet ingredients and beat until well blended.
Stir in nuts and raisins. Drop dough by round teaspoonfuls onto a cookie sheet, two inches apart. Bake at 365 degrees for 25 minutes, or until medium-light brown
Cool on a wire rack. Store in a tightly-closed container.
1/2 cup softened butter, plus one Tbs.
2 Tbs. grated orange rind
1/2 cup fresh orange juice
2 cups flour
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 cup finely chopped pecans or walnuts
1/2 cup golden raisins
