Fruit Ices

Regular customers of Angelo Brocato's century-old gelateria in Mid-City each have their own favorite item there. Among the most popular of these is lemon ice, strawberry ice, and the other sorbettos the Sicilian parlor has long produced. They're all made from fresh fruit, and only just enough sugar to balance their flavors perfectly. They are as refreshing in summer as anything else you can imagine. The most convincing encomium I ever heard about the ices came from the lips of a chef who, decades ago, was already famous for making his own versions of dishes that most restaurants bought ready-made. He was running through the menu, but when he got to the lemon ice, he said, "It's Brocato's. How are you going to make anything better than theirs?"
