For millennia the health benefits of garlic have been revered, with very real claims and less provable proof of its ability to do everything from battle cancer cells to warding off vampires. Lowering cholesterol\, improving bone health, etc. etc. We mention this for a very practical purpose right now, since it is assumed to be a credible warrior in battles against respiratory infections. All media panic aside, this seems a worthwhile precaution at this time. Roasting does cut down on the miracles reputed in this small and pungent bulb, but there is no downside to roasting whole pods in olive oil and dropping it on everything appropriate. And it makes the house smell great.
Especially good for social distancing.
Roasted Garlic
Slice whole pods of garlic in half horizontally and place cut side down in a puddle of olive oil. Bake in the oven at 350 degrees until soft and falling out of the skins. Let cool and remove from the skins. Refrigerate.
