Gazpacho @ Borgne
The cuisine of Borgne is Spanish by way of the Canary Islands community that has long existed in eastern St. Bernard Parish. St. Bernard has always grown magnificent tomatoes, but the chef does a take on them, using various heirlooms as the base of his cold tomato soup. The usual tint is yellow, and the texture is smooth. Both of those are departures from the standard chunky, red gazpacho, but the only way you could not love this would be if you didn't like tomatoes.
