My daughter finished this plate of luscious Fettuccine Alfredo that I brought to her from Middendorf’s, where they serve their paper-thin housemade noodles every Wednesday, Thursday, and Friday in September. I wish I could have finished it, but it was just too rich. It is a generous plate of paper-thin fettuccine noodles in a cream sauce redolent of Parmigiano Reggiano, with a lot of coarsely ground black pepper throughout. Decadent.
This is not the sort of thing one would expect to find at a Louisiana fried seafood house like the legendary Middendorf's, but it was a signature house specialty at Bella Luna, the former home of Middendorf’s owners Horst and Karen Pfeifer.
Horst is a German-born gourmet chef in the European style, but every September he gives the people what they want, and what they want is this superb fettuccine they remember from many years ago at Bella Luna, in the days before Katrina took it from us.
I was surprised to see that it is offered with a marinara option, though I don’t remember that from the Bella Luna days. It is also offered with a protein topper, which I would never do. It is $15.95 for the basic model, which needs absolutely nothing else. It’s available at both Middendorf locations through September. Wednesday, Thursday, and Friday only.
