Oysters For Your Penance

One of Tom’s favorite places was Clancy’s, and it was mine too. There are so many classic Clancy’s dishes it’s hard to count, but perhaps the one with the most buzz is the oysters, or maybe that was just the one that excited Tom the most. He was the oyster guy, though it does seem to me that this dish at Clancy’s was the first to combine oysters and Brie. And since there are lots of pairings of oysters and Brie around town, that would make Clancy’s oyster app one of the lofty poached dishes around town. This one I think is for the more gourmet diners in town, with a piece of rind on every slice of cheese. The oysters are crispy, greaseless, and golden brown, and placed atop a tiny mound of spinach, then topped with a generous chunk of Brie. Most of the Brie melts into a puddle at the bottom, leaving a visible piece of the rind on top. This popular dish is just one of the many reasons to go to Clancy’s. The main one to me is just Clancy’s, the place, itself. Don’t you just love it? Say hi to Patrick the waiter for me when you go…now that I have reminded you.
