Panned Rabbit With Spaetzle @ La Petite Grocery

Panneed rabbit is a natural. It's naturally tender, but it's so low in fat as to run the risk of getting dry. But the pannee technique--which is shallow frying--fixes that issue. At Le Petite Grocery, it's also touched with brown butter, and set next to a pile of spaetzle noodles, no two of which are the same size or shape.
