A regional chain of Mexican restaurants that started in New Orleans (by the family that founded Liuzza's, one of the great neighborhood joints), Cuco's is slick and formulaic, even though the current look is that of some sort of back-road Mexican cafe. Some of the food here can be good--they start off with good enough ingredients, and have had real chefs develop recipes for them. But the consistency record is terrible, a problem from which chains cannot seem to escape. Service is very friendly.
